Hollywood Boulevard has been struggling lately with vacancy rates hitting 30% in July, but the vibes are officially starting to shift. Tucked inside the legendary Roosevelt Hotel—which is celebrating its 100th birthday next year—a new restaurant called Gable is officially the neighborhood's new main character.
Since opening in August, the spot has been turning heads for its "Contemporary Californian" menu, which mixes American, Asian, Italian, and Mexican influences. According to general manager Parker Sprow, the goal is to honor the history of the hotel—where icons like Marilyn Monroe once hung out—while keeping the menu connected to LA’s eclectic present.
The menu lowdown
The food is highkey experimental. The star of the show is the grilled branzino, served ssam-style with Mexican-inspired salsa macha and salsa verde. If you’re a pizza person, they’ve got a "Sixth and Wilshire" pie topped with bulgogi, kimchi, and mozzarella. As for the drinks, the menu is split into categories like "whimsical" and "spiritless," featuring unique combos like the Yellow King, made with tequila, yellow tomato, miso honey, and basil.
Why it matters
Critics are already calling it the "new king of Hollywood," which is a massive W for a strip of road that’s been fighting for its life against tourism dips and homelessness. Sprow says they aren't just catering to hotel guests; they want to be a go-to for locals who want reliable food, music, and lighting. If they keep this energy up, they might actually be the catalyst that saves the boulevard.
