The ultimate autumn vibe

As the weather shifts, our taste buds are officially over the summer refreshers and are craving something with major comfort energy. Real talk: if you're looking for the perfect drink to match the cozy aesthetic of the season, Palé Hall’s new cocktail is it. It’s giving warm, spiced, and sophisticated—basically everything we need for those chilly nights in. The best part? It’s designed to pair with a slice of carrot cake, which is a major W in my book.

How to make it

This recipe comes from Bruce Dorfling, the bar manager at Palé Hall in Wales, and it’s surprisingly easy to master at home.

The Infusion First, you’ll need to prep your vodka. Take the peel of one unwaxed lemon (make sure to get all that bitter white pith off!) and drop it into 375ml of good vodka. Let it sit in a jar overnight to soak up that citrus goodness.

The Mix When you're ready to serve, grab a shaker and combine:

  • 50ml of your homemade lemon-infused vodka
  • 15ml hazelnut liqueur (like Frangelico)
  • 15ml vanilla syrup
  • 15ml fresh lemon juice
  • 15ml fresh orange juice
  • 15ml fresh carrot juice
  • 6 dashes of foamer (or one egg white if you’re feeling extra)
  • 4 dashes of aromatic bitters (or a pinch of ground cinnamon)

Shake that mix hard with ice, double strain it into a coupe glass, and garnish with an orange slice. Pro tip: Definitely serve it with a side of carrot cake to really lean into the main character energy of this drink.

Why it matters

Sometimes you just need a drink that feels like a hug in a glass. This recipe is a practical way to level up your hosting game without needing to be a professional mixologist, and it’s the perfect excuse to treat yourself to a slice of cake.
